A chocolate cake that is rich, moist and incredibly delicious. One of the best chocolate cakes I have ever made that has a tender crumb, with the right amount of sweetness, perfectly moist with an intense chocolate flavor. I am talking about Beatty’s Chocolate Cake that is a rave all over the internet and the kind of cake one can bake for special occasions and birthdays.

Other than the inclusion of freshly brewed coffee, I also like that the choice of fat is vegetable oil which gives the cake its super moistness. The espresso or freshly brewed coffee intensifies the chocolate flavor and does not overpower it. The cake batter will be on the runny side and that is perfectly fine. Remember to use room temperature ingredients while baking and do not over bake as you might end up with a dry cake. Follow the instructions to the T and you will find yourself with a winner of a recipe.


I filled two layers of cake with ganache that complemented the cake well and poured ganache all over the cake allowing it to drip along the sides giving a perfect finish for a birthday cake. If you find yourself drooling over your keyboard and unable to control your chocolate cravings, why dont you do yourself a favor? Just get into your kitchen and bake this outstanding cake.

Prep time: 15 min
Cook time: 35 min
Serves: 10
Main Ingredients:

flour
cocoa powder
Ingredients
Flour - 1 3/4 cups (maida)
Sugar - 2 cups (I used 1 3/4 cups)
Cocoa powder - 3/4 cup
Baking soda - 2 tsps (I used 1 1/2 tsps)
Baking powder - 1 tsp (I used 1 1/2 tsps)
Salt - 1 tsp
Buttermilk - 1 cup
Vegetable oil - 1/2 cup
Extra large eggs - 2 (I used large eggs)
Vanilla extract - 1 tsp
Instant Coffee Powder - 2 tbsps (I used 2 1/2 tbsps of Nescafe Indian brand )
Hot boiling water - 1 cup (add instant coffee powder to the water and mix)
For ganache:
Fresh cream - 200 ml
Dark chocolate - 400 gms (grated)
Method
Preheat the oven to 176 C or 350 F. Grease two 9" round round cake pans. Line with parchment paper at the bottom, grease and dust lightly over the parchment paper.
Sift the flour, cocoa powder, baking soda, baking powder and salt.
In a bowl, add sugar and the sifted flour mixture and mix well.
In another bowl, add the buttermilk, oil, eggs, and vanilla extract and whisk well. Add these wet ingredients to the dry ingredients and on low speed, mix well. Add the hot coffee mixture and continue to mix on low speed till combined. Do not over mix. Scrape the bottom of the bowl and the sides of the bowl and mix well with a spatula.
Pour the batter into the prepared pans and bake for 35 to 40 mts or till a skewer inserted in the middle of the cake comes out clean.
Cool the cake in the pans for 30 mts and then overturn them onto a cooling rack and cool completely.
While the cake is cooling prepare the ganache. In a stainless steel bowl, add the fresh cream and place on low flame. As bubbles appear along the edges, turn off flame and pour over the grated chocolate. Leave aside for 3 mts. After 3 mts, mix well such that the chocolate completely melts and blends well with the cream.
If the cakes have a dome, slice off the top layer of the dome to achieve a flat cake top. Spread a little ganache in the center of the cake board. Place one cake layer on cake board and place this on a turntable. Using an offset spatula spread a thick layer of ganache all over and place another cake layer with the flat side up on top of it. Spread ganache all over the cake and on the sides. Use a scraper to give a smooth finish all over. Allow to set for half an hour.
To make the remaining ganache of pouring consistency, heat some more fresh cream and add to the ganache and mix well. It should be of pouring consistency. Pour it all over the cake and allow to drip along the sides. You can further garnish with chocolate shards or curls or as you fancy.
Tips
Bake the cake in TWO 9" round cake pans or THREE 8" round cake pans. Or halve the recipe and make it in ONE 9" round cake pan or TWO 8" round cake pans.
Do not overmix or over beat the cake batter. Just mix until the ingredients are incorporated.
If you do not have a hand mixer, use a whisk or wooden spoon to mix the cake batter.
Cake batter will be slightly runny and thats alright.
To make buttermilk, add a tbsp of lemon juice to a cup. Fill the cup with milk and leave aside for 10-15 mts. You will find that it will slightly curdle. This is buttermilk mixture.
Preheat your oven for at least 20 mts before baking to ensure a proper baking temperature.
Fill the cake pans about half full and place in the middle shelf of the oven
Avoid opening the oven door till 30 mts of baking.

Use room temperature ingredients. The coffee mixture has be boiling hot.

2 sticks (1/2 lb.) butter
2 c. sugar
4 eggs
1 c. milk
3 c. flour
3 tsp. baking powder
1 tsp. vanilla extract
1 tsp. lemon extract
Cream butter and sugar together until lightly creamy, add eggs, one at a time and beat. Add milk, flavoring, flour. Stir and mix well. Then beat or whip until light and creamy.
Bake at 350°F until cake comes from side of pan.

Heat oven to 350 degrees. Prepare two 8-inch cake pans.
Make sure milk and eggs are room temperature.
Pour milk (I used skim) , egg whites, and extracts into medium bowl and mix with fork until blended.
Mix cake flour, sugar, baking powder, and salt in bowl of electric mixer at slow speed. Add butter, cut into cubes and continue beating on low for about 1-2 minutes.
Add all but 1/2 cup of milk mixture to flour mixture and beat at medium speed for 1 1/2 minutes. Add remaining 1/2 cup of milk mixture and beat for about 1 minute.
Pour batter evenly between two prepared cake pans.
Bake until toothpick inserted in the center comes out clean, 27 to 30 minutes.
Allow cake to cool to room temperature.
Frost cakes with favorite frosting.

Even grand daughter Caroline, 20 is involved in the business as Office Manager.  Ana has taken her own Grandmother's recipe handed down to Ana's mother, Sara Matta De Juan. The original recipe made by her mother on the island called for a cake without syrup and when Ana arrived in Miami in 1978, her client base was primarily of Cuban descent and she decided to diversify her product by moistening it with Ana's secret syrup consisting of Rum and Coconut!

No doubt it was the original baking powder manufacturers who convinced the world that cakes should be “light and airy.” But what a pity if we have to use baking powder that contains aluminium in order to enjoy such cakes – especially in these days when we know so much about the harmful properties of aluminium?

The good news is that you can now use bio-friendly ingredients to produce cakes that are just as light and airy, just as delicious, and far more nutritious. In fact, you can even use our suggested substitutions below to convert your favourite “junk” recipe into a bio-friendly recipe – and don’t be surprised if you prefer the bio-friendly alternative.

At Nature’s Choice we supply an NC aluminium-free baking powder. If you cannot avail yourself of our baking powder, and you do not have the ingredients to make your own, then you can use the following method to achieve light, fluffy cakes and scones, or you can make your own aluminium-free baking powder at home.

(1) separate the eggs
(2) beat the whites until they are stiff
(3) slowly add the honey or fructose and continue beating
(4) add the yolks and continue beating 1 minute
(5) whip the cream separately
(6) fold the cream into the egg-whites
(7) gently fold in the remaining ingredients
(8) bake in the usual way

Obviously, these cakes do not rise as high as they would when using baking powder, but they do not present any threat to health. Healthy icing and toppings are discussed in the next section.

Strawberry is a hard worker that runs the Berry Bitty Cafe and gets a lot of things around the city done. She is depended on by others for her wise, open-minded views about everything and can befriend just about everyone. 

Appearance
Strawberry Shortcake is a young girl with fair skin coloring and bright green eyes. Her hair is magenta-red and about waist-length with multiple curls of hair that frame her face, and also go along the lining of her hair. She has a light spray of freckles between her eyes and wears light pink lipstick/gloss. She usually wears a pink, strawberry themed cap with a green leaf in the center and green visor piece. It has been revealed that underneath her hat she always wears a green and white striped bow with a Strawberry Icon in the center.

Strawberry's common outfit consists of a pink dress with magenta polka-dot print worn with a pale pink-white blouse on top of it with two green diamonds and a single Strawberry in the center. Also worn are green and white stockings and a pair of bright magenta maryjane shoes.

Strawberry also has a "winter version" of this outfit consisting of a white long sleeved shirt with a pink short jacket-blouse with fuchsia pink polka dots and a single strawberry button and a green leafy neck lining. Also coming with this is a pastel pink jean skirt with a green belt and her normal stockings and Maryjane's. Another, but not seen as often outfit consist of a pink top with magenta spots and a green leafy-styled neck, a very thin green belt with strawberry clip and a fuchsia ruffled skirt.

For the beach, Strawberry's most common piece is a light pink top resembling a strawberry with a string around her neck and a strawberry clip. The skirt on this is light green with ruffled lining with a single pink stripe going around the center. She wears a big pink flower in her hair with a strawberry in the center. In season 2 she wore a modified version of this. It came with a green bow with single white stripes and a pale strawberry in the center. As well as a pale pink floral skirt with strawberries all over it and pink frill-trim, clipped to the side with a big strawberry. Her sandals are magenta on the bottom while the straps pale pink with tiny strawberry icons on each foot.

For formal events, Strawberry usually puts on a multilayer light pink dress with a light green leaf styled neck, a small necklace, pink elbow length gloves, a strawberry themed tiara and red shoes with strawberries on the toe. The sleeves of the dress look like strawberries and the overal dress is very glittery.

For winter Strawberry tends to just put on a long green jacket with pink gloves and a magenta and white striped scarf and pink boots with fur trim and small strawberry zippers. Another version of this has her wearing a magenta jacket with light colored cuffs, her normal stockings and cap, pink gloves, a green and white striped scarf, and her normal shoes.

Personality
Strawberry Shortcake is a young, sweet, and spirited girl with a lot of creativity, positivity, and energy. She befriends everybody in the city with her lively outlook on life and passive nature. Even the rudest of rude, or coldest of cold are quick to realize the error of their ways after Strawberry talks to them. She always puts others before herself and is sweet to everyone and anyone. Though she does not like hurting feelings, if she feels she has to be honest to someone, she does it with sincere tact and without hesitation. She also tries to lend a supportive hand when someone else needs to be honest too. Strawberry is always seen as a leader and is always the one to fix or solve others' problems. She is always happy and ready to help. 

Compared to the other girls, Strawberry has a very high tolerance when it comes to rude people and problems in general. It takes a lot of stress before finally reaching her cracking point. When distressed, she becomes discouraged and the solution becomes difficult to see immediately. Several examples being: when she had to release the Great Geyser Stone, when preparing the activites for Berryfest, and when Custard and Pupcake went missing.

Usually very level-headed and with a calm, cool attitude, Strawberry likes to see the glass as half-full and look on the bright side. She tries her hardest to never let problems get the best of her and does as much as she can to solve them before they spiral out of control. Though she may not be as brainy as Blueberry, her open-mindedness makes her very modest and humble. She prefers to plan things out rather than rush headfirst into situations. Rather than being proven right, Strawberry's only wish is for everybody to be safe and happy, even if it means sacrificing her own happiness in the process and possibly even causing more problems for herself, until everyone confronts the problem head on. With her gentle disposition and sweet nature, she's the best friend everyone would want to have.

Strawberry has a golden rule for every event, game, competition and project: the most important thing is to have fun. If things become too stressful or inconvenient, she would speak with the one in charge, gently point out the problem and suggest to change the attitude.

Movie
In the series pilot movie, Strawberry was the same as she acts in the series. However, after enough bad luck occurred and she realized the trip was for nothing, Strawberry finally lost it and suffered a breakdown as a result.
