Sift those dry ingredients. It’s not just a matter of mixing; sifted flour makes it lighter and easier to incorporate into other ingredients. It’s OK to cut a corner by fork-sifting or using a wire whisk, however, the confectioners’ sugar must be sifted. The results are worth the trouble.
Know your oven. Take your oven’s temperature with a thermometer to make sure it corresponds with the dial. If your oven has hot spots, gently turn halfway through baking. Bake cakes in the lower third of the oven.

"A mug cake is a real homemade cake using all the ingredients you would put in a regular cake", says Sandra Mahut. "However, it takes a fraction of the time and is cooked in a mug in the microwave. The only equipment you require is a mug, a fork or whisk and (sometimes) a bowl. There's no need to weigh anything - all the quantities are given in spoonfuls."

INGREDIENTSeggs - 2 Maida - 3/4 cup Sugar - 1/2 cup Baking powder - 3/4 tsp Milk - 2 tbsp Vanilla essence - 1/2 tsp
METHOD
Sieve flour and baking powder together and keep aside.
Powder the sugar.
Mix sugar, eggs and milk thoroughly.
Beat well for 5 mins.
Add maida and baking powder.
Mix the flour and add essence.
Blend again and pour the mixture into a greased plate.
Set the oven in "Crisp Mode" and bake for 6 minutes at 850 watts.
Cool, cut into wedges and serve.
