Wacky cake is a spongy, cocoa-based cake. It is unique in that unlike most pastries and desserts, no eggs, butter or milk are used to make the cake batter.

It is commonly believed Wacky Cake may have been created as the result of rationing during World War II, when milk and eggs were scarce. Active ingredients in wacky cake include flour, sugar, cocoa powder, baking soda, vegetable oil, white vinegar and vanilla extract.Some recipes add brewed coffee as an additional ingredient. The cake may be topped with icing or confectioner's sugar, or even served plain.

The cake is considered a popular delicacy at bake sales in numerous rural regions of the United States.

Usually served with just a dusting of powdered sugar, or buttercream frosting, there is also a frosting/glaze recipe sometimes found attached that also is made from "ration" ingredients.

There are several variations on why this confection is referred to as "Wacky Cake." Many people[who?] believe that its lack of eggs or the unconventional "divot wells" method of preparation. Another legend[citation needed] has it that a small child, while seeing the cake being made stated, "Oil and vinegar in cake! That's salad dressing! Mom, you are wacky!" The legend is so pervasive among Italian American households that many believe theirs to be the family which is both the inventor of the cake and the coiner of the name.

In many Italian-American households it is often the traditional birthday cake. Sometimes the cake is cooled, removed from the pan and shapes are cut out, or the entire top may be decorated with butter cream frosting.


 This recipe has been around longer than I have.  Chances are your granny or great granny may have made this in the Depression era.  Some may know it as “Wacky cake” or “Depression Cake”.  During the Great Depression, someone figured out how to make a moist, delicious cake without eggs, milk, or butter because these ingredients were expensive and hard to get.  I call this a timeless generational recipe – passed down from generation to generation.

Since then, this cake has become quite popular for people who are vegan or allergic to dairy… like my daughter, Abigail.  She is allergic to dairy and like her mama, she loves her cake but can’t always eat it.  This cake  taste remarkably good with great flavor and texture – very similar to chocolate cakes made with boxed cake mix.People are always surprised to discover there is no dairy when I tell them.  Top off with your favorite chocolate frosting or a dusting of powered sugar and you’re good to go!  Enjoy!

VANILLA CRAZY/WACKY CAKE

Ingredients
1 1/2 Cups flour + 3 Tablespoons (all-purpose)
1 Cup white sugar
1 tsp. baking soda
1/2 tsp.  salt
1 tsp. white vinegar
1 1/2 tsp.  pure vanilla extract
5 Tbsp. vegetable oil
1 Cup water
Directions
Preheat oven to 350 degrees F.

Mix first 4 dry ingredients in a greased 8" square baking pan.  Make 3 depressions in dry ingredients - two small, one larger (see #3 in photo below). Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression.  Pour water over all.  Mix well until smooth.

Bake on middle rack of oven for 35 minutes.  Check with toothpick to make sure it comes out clean.  Cool.  Top with your favorite frosting.  Enjoy!

Tip
For a stronger vanilla taste, you could add a 1/2 teaspoon more of vanilla for a total of 2 teaspoons.

You can double this recipe, just use a 9x13 baking pan.

You can also mix the batter in a bowl for neater, easier mixing.  Be sure to follow the directions the same way - mixing the dry ingredients then making the depressions for the wet ingredients.  Don't forget to grease you pan.

Although I have not used Gluten Free flour mixes for this recipe, many people have and said the cake turns out wonderful!  "Yes it is yummy and very moist. It even works with gf flour mixes!
